Arcis Golf’s Premier Payson Properties Undergo Multimillion Dollar Food & Beverage Renovations

DALLAS (Mar. 3, 2025) — Arcis Golf’s multimillion dollar transformation of its two premier Payson, Ariz., private golf facilities—The Rim Golf Club and The Golf Club at Chaparral Pines—has been completed. The clubs, which offer joint club memberships, have reimagined dining and entertainment options to fit the tastes and lifestyles of their mountain community members and guests.

The Rim Golf Club

Sitting at 5,000 feet in Arizona’s spectacular Mogollon Rim Country, The Rim Golf Club is surrounded by the largest stand of Ponderosa Pines in the United States. One of the most beautiful, gated golf communities in the Southwest, it boasts an award-winning golf course designed by Jay Morrish, ASGCA, and the late Tom Weiskopf: The course appears on Golf Digest’s list of “Best Courses in Arizona” and Golfweek’s 2025 list of the “Top 200 Residential Courses in the U.S.”

The Rim’s modernized clubhouse has a sophisticated Napa Valley feel that complements its robust wine program. The adjoining restaurant offers stunning views of the golf course and outdoors. The room was reconfigured with varied seating options—counter-height community tables, banquettes, booths, and freestanding tables. A wall of curated black-and-white photography showcases vineyards and wine imagery.

Expansive vistas welcome patrons to the new bar, which features custom-designed cabinetry and bar shelving. A new interior focal point is a striking 8-foot-diameter overhead fixture, complemented by small-scale glass pendants over the booths and bar area. Potted olive trees infuse a touch of nature into the space.

The hub of club life is The Rim’s outdoor granite patio, where members and their families and guests gather around community tables, new furnishings, televisions, and fire pits. Live entertainment draws audiences weekly.

The Rim’s culinary program is sophisticated and refined, with a menu featuring steaks, chops, burgers, pastas, elevated sandwiches, unique salads, classic appetizers, and more. The food offerings pair well with the extensive wine list that embraces California’s most exclusive boutique wineries and growing regions, as well as emerging varietals from Italy, France, and Portugal. An impressive list of craft cocktails and ice-cold beers is available, too. Members and guests will enjoy Italian Kitchen (made-to-order pastas) and Prime Rib specialty events.

Upgrades were made to the club’s fitness center as part of the transformation, with the addition of new flooring, cardio equipment, saunas, and a refreshed nail salon. A full slate of fitness classes is offered year-round in this four-season environment.

The Golf Club at Chapparal Pines

The family-centric Chaparral Pines also has been reimagined to better serve its members’ dining needs, both indoors and out. At Chapparal Pines, a mountain lodge feeling has been created to meld the club’s existing rustic architecture with modern, fresh touches.

Along with the existing 30-foot ceilings, heavy timber beams, hand-hewn columns, and stacked stone walls, the area has been softened with lounge-seating groupings in soft blue tones, hand-knotted area rugs, and beautiful metal/wood cocktail tables.

The two-sided, massive fireplace now has a large piece of art over the mantle and an overscale framed mirror. Potted trees have been used throughout to add layers and interest in the approach to the newly imagined bar and restaurant.

The lounge side of the fireplace serves as a transitional area between the entryway and the dining area. Large pendant light fixtures are located above two counter-height community tables, ideal for gathering after a round of golf. The bar top, built from locally sourced hickory, is rich in tone; the back bar and liquor display are illuminated; and televisions are incorporated in the shelves.

Diners can choose from various seating options. Rich leather booths highlight the outdoor views while separating the bar lounge and community table area from the dining room.

For outdoor diners, a patio pavilion offers a relaxed environment with intimate nooks, group seating by the fireplace, and the ability to transform into a special events space. Live music is featured each week.

The restaurant concept is relaxed and casual with a menu highlighted by sumptuous sandwiches, burgers, and sharable appetizers perfect for a meal before or after golf. While one can choose from an array of American classics, international dishes—such as Korean Bao Buns—are available. The restaurant is home to weekly events such as Tacos & Tequilas, with additional favorites to be unveiled on a seasonal basis.

Beverage offerings highlight a diverse selection of local and international favorites (porters, dark beer) and spirits. Cocktails and the apéritif menu reflect a strong mountain influence and feature warming seasonal selections such as schnaps, grappa, and mulled whisky.

The Golf Club at Chapparal Pines was designed by David Graham and Gary Panks and stretches to 7,000 yards.  This golf community is also on Golfweek’s 2025 list of the “Top 200 Residential Courses in the U.S.”
